During the week somebody on Twitter asked for a recipe that would show the best side of home-grown potatoes.
In my humble opinion the only true way to appreciate the delicate fresh and earthy flavours of fresh potatoes are through a simple recipe with the least amount of ingredients.
I could not think off a more appropriate recipe than a tasty and humble Italian soup! As we know, Italians are great soup eaters, and some of the best soups in the world come from Italy.
Delicate puréed soups like this classic Veneto soup is served as a first course before a main meal. But being light in texture and full of flavour this potato and onion soup can be served all year round.
I’ve made it many times and the immediate response from all my guests is always the same.
They ask for a second helping!
